Ok, when I comes to meal prep items to have in my fridge, this warm lentil salad will always be tops for me. It’s amazing on its own, with some crumbled goat cheese on top, is an excellent side to salmon or grilled chicken. Quite frankly, it’s amazing anyway that you eat it. Today I’m going to open up a can of tuna and mix it into the salad. It’s light, bright, healthy and so damn delicious. . . Warm Lentil Salad with Spinach . . These cheesy broccoli chips are so easy to make and so darn delicious to eat. You can totally eat them on their own, but I love to pair them with a whipped herb ricotta for dipping. The ricotta gets drizzled with a little bit of the spicy oil that was brushed on the broccoli before roasting so it’s a great way to tie the dish together. Altogether it’s not a lot of ingredients yet gives you a lot of flavor! . . Roasted Cheesy Broccoli Chips . . I’ll be posting the recipe later this afternoon! | D

A wise woman once taught me, “When life breaks your eggs... Make Quiche” . . . . Broccoli Cheddar Quiche . . Pie Crust: (This makes one pie crust) 1/2 cup cold butter cut into pieces 1 1/4 cups flour 1/2 tsp salt 3-4 tbls ice water Combine flour and salt in food processor and pulse to mix. Add butter and pulse until it resembles crumbs. Add enough water so that when you pulse a few times, the dough begins to form a ball. If you find your mixture is too dry, you can add another tbls of water. Tur

If you know me you know that my favorite vegetable in the world is Broccoli Rabe (or Rapini). I grew up eating it, as my Mom and Grandma made it several times a week. It does have a bitterness to it so some find it an acquired taste. My husband did not grow up eating this and when we met and I started making it at home, it took him a year or 2 to actually enjoy it. He now loves it as much as I do. This is my favorite way to prepare it at home and I make a couple batches a week because to put it

This is a perfect cake to make for Dad this weekend! 🍑 🧡 When stone fruit season happens, this Peach Olive Oil Cake is on constant rotation. Ground beef cooked up in a spicy flavorful sauce and then stuffed in a tender baked sweet potato before being smothered in melted cheese is a dish that every one of my kids will consistently devour. And the perfect thing is that the beef is a perfect thing to make for meal prep early in the week and just reheated after you bake your potato. Easy Peasy. And we love that. . . . I came across a recipe on my explorer page by Catherine @chouquettekitchen for a French Apple Cake and I knew I immediately had to make it. It was an unfussy simple cake and it was right up my alley. Her video made me lol because she prefaced the recipe by explaining that the recipe “Went viral in our house, meaning that her husband ate it all”. I thought that was hilarious 🤣 And Catherine was right… it went viral in our House as well…. It’s a simple vanilla cake batter filled to the brim with

In my cookbook I have a recipe for Strawberry Oat Bars that uses strawberry jam and chopped up strawberries. I wanted to show you how easy it was to change up the flavor profile of the bars simply by exchanging out the jam and berries and citrus used. I had a jar of @stonewallkitchen Blueberry marmalade and used that and replaced the strawberries with blueberries. I followed the exact recipe other than that. It’s a good reminder not to feel married to a recipe. Don’t be afraid to riff and play w

This is my families perfect idea of a Sunday dinner… especially during a snowstorm! And the best thing about this recipe for Sheetpan lasagna is that the 3 main components; the beef mushroom sauce, the béchamel and the ricotta mixture can all be made up to 2 days in advance and just assembled the day you want to serve it. If I had to choose a recipe that represents my cooking style, this very well may be it. It’s simple and hearty and uses ingredients that I always have on hand in my pantry. It’s made in one pot and it’s incredibly delicious, if not a bit decadent. There is no smoke and mirrors to my cooking. Just simple elevated food that is stick to your ribs good and feeds the soul. I’ll be making a pot of this this coming weekend to serve as a bed for grilled chicken and steaks. I think you should do the same

There is a viral Hot honey, cottage cheese, sweet potato beef bowl making the rounds in social media. Tbh, I’ve been making this bowl forever minus the cottage cheese… because cottage cheese 🥴… not a fan at all… But my husband loves it as do several of my kids… When I saw Anthea @superhomecook turn it into a stuffed potato, I was all in. I love stuffing potatoes to begin with and this version looked crazy good….. and according to my family it was exactly that. I made taco meat using my homemade

Since its barely going to break 70 degrees here for a few more days I thought a pot of one of the families favorite soups from the cookbook was appropriate. The great thing about this recipe is that in the book I start the soup off using raw chicken breast and then build the soup from there. But yesterday I did some meal prep. I roasted off some chicken breasts, pulled the meat from the bone and had a big bowl of chicken in my fridge. I figured that this soup was a perfect use for it! And I was

Moussaka is one of Greece‘s most popular and traditional dishes. You’d be hard pressed to find a taverna that doesn’t serve it. John would order it every island that we visited and they were all a bit different, but all totally delicious. It’s a hearty layered dish of potato, eggplant, a tomato based meat sauce that can be done with either lamb or beef and it’s all blanketed under a layer of creamy béchamel. It’s baked until gorgeous and golden and it is the ultimate comfort food. . . Moussaka .

Because I love to cook what my family loves to eat, quite often I don’t eat that food because I haven’t eaten meat or chicken in over 30 years But every once in awhile I post something that I’m really excited to eat and this is one of them. These seafood stuffed portobellos are a serious treat for me and I love to make them when I get the craving. Yes, are that good. I included the recipe in my cookbook, You Got This! on pg 108. The algorithm is a funny thing. I got back from Ireland a few weeks ago and I was talking about how often I saw sausage rolls over there. They were everywhere sold in every cafe abs the minute I began talking about it, the minute I started seeing sausage rolls flooding my explorer page. This version specifically was everywhere. These were filled with sausage, stuffing, bacon and cranberry sauce and I knew it would be a great way to use up extras I had from Thanksgiving. The first video I saw was

I’m a huge lover of roasting all veggies. I am not a huge lover of green beans. It’s not that I don’t like them. I do, but I’m not in love with them…. Until I began to roast them and then my mind changed real quick. Sort of was a game changer for me. And then I saw Chelsea @chelseasmessyapron take the extra step of adding Parmesan and panko to the roasted beans and now I just done want them any other way. And I’m pretty sure you’re gonna feel the same way. Full disclosure, I may or may not have

Making a batch of crispy crunchy granola to snack on is a great meal prep idea. Having it to snack on all by itself or use it as a topping for Greek yogurt and berries or ice cream is a great way to enjoy it. This is simple to make and I store it in a large glass jar. When the jar is close to being emptied I know it’s time for a new batch. | Diane Morrisey Cooking
